For Mademoiselle Rachel her first bite of a macaron represented a moment of luxury and as such, we strive to ensure that each of our customers experience a taste of Paris with every bite. We're always excited to see the imaginative and fun ways our macarons are used to decorate cakes and patisserie by talented bakers.
Flour and Fold tagged us in a photo on instagram (picture below!) recently and we just loved the design of the cake and how our macarons were displayed as a fabulous topper.
So, we decided to reach out and ask Jess a few questions about her business.
Tell us a little about yourself, what's your business, and when did you start?
I’m Jess from Flour and Fold, and I specialise in contemporary romantic wedding cakes. I’ve been working in the food industry for 5 years now, and have developed my work over time to be where I am today.
What was the inspiration behind launching Flour and Fold?
What's your speciality bake and where do you draw inspiration from?
I love using natural simplicity in my work, incorporating inspiration from the world around us. This can be botanical, textural, or even contemporary elements that I see, and I love using florals. One of my most popular flavours this year is lemon & blueberry, it just gives a perfect sweet and fruity taste on a summer's day.
How do you incorporate our macarons into your creations?
I went on a macaron course in Paris back in 2014, and was in awe of the process and the time it took to make these tiny little treats! I experimented a lot when I got home, but since working professionally in the cake industry, I often use MM Macs in my work as it gives me a wider scope of flavours and colours that I can use, and realistically make in my studio kitchen. I love adding them as little touches on a cake, as well as the mini towers for a showstopper!
Where are you based and how can people order from you?
I am based in Faringdon, Oxfordshire - on the edge of the Cotswolds. I create wedding cakes for couples all over the country, as well as focusing on my local area.
How did you hear about Mademoiselle Macaron?
I first heard of Mademoiselle Macaron on a trip to Edinburgh with work many moons ago! They were absolutely delicious, so I was so excited to find them online for home delivery.
Lastly, if you could be any macaron, which one would you be and why?
Pistachio! I love the nutty flavour, and green is my favourite colour.
